Due to human (non-bot) spam the first contribution of a user has to be reviewed and activated manually, all further contributions do not require this.
As long as a user does not have at least one reviewed and activated contribution, the user is unable to edit his profile, set a avatar, title picture or a signature.

Animal Husbandry is a planned feature that is visible on the new roadmap that will be released with 9.0.
War and Weapons will never be in Eco, so it's not listed anywhere. Eco is meant to be a education-compatible and peaceful game, which will not change.
Flying, Trains and other very work intensive features with little return in the current state of the game would be considerable after leaving Early Access, but do not necessarily fit the game concept. While Trains are something we think about, flying mechanics would be too much, of little use and extremely work-intensive for that little use.

The relay servers are hosted by us and used automatically when a connection to a server cannot be established otherwise, i don't think you can setup your own, but am not totally sure about that, i'll ask devs after the easter holidays.

Rubble can cause performance issues due to some physics glitches, as admin you could remove rubble every once in a while via the /cleanrubble <radius> command.

you do not need a server, as singleplayer will start one for you. Playing with a group or on a server is recommended, but you can play the game solo / duo, in that case, depending on your preferences you might want to customize the difficulty settings, though.

Eco does allow you to overwrite files and play the game.

We also know of a potential bug after switching game-servers, so please try if it works when you start the game and directly join the server you want to talk on.
